Let's be honest about something.

There are days when cooking a nourishing meal from scratch is the last thing you feel like doing. You're tired. The kitchen feels like a project. And the easiest option is whatever requires the least effort.

I completely understand — and I want you to know that eating well on those days is still absolutely possible. It just requires a little thinking ahead.

Here are some of my favourite strategies for nourishing yourself even on the days when you have nothing left to give:

Keep your staples stocked. Canned lentils, canned chickpeas, canned black beans — these are ready in seconds, packed with protein and fiber, and endlessly versatile. Rinse and add them to anything. A salad, a wrap, a bowl of greens with olive oil and lemon. Done.

Embrace the power bowl. Leftover grains from earlier in the week, whatever vegetables are in the fridge, a handful of greens, some seeds or nuts, and a simple dressing. This takes five minutes and it is genuinely nourishing. No recipe required.

Frozen vegetables are your friend. There is absolutely nothing wrong with frozen spinach, peas, edamame, or mixed vegetables. They are just as nutritious as fresh — often more so — and they are always ready when you are.

Batch cook once, eat all week. When you do have energy — a Sunday afternoon, a quiet morning — cook a big pot of lentils, quinoa, or roasted vegetables. That one hour of effort feeds you for days with almost no thought required.

Simple is enough. A bowl of oatmeal with fruit and seeds. Avocado on whole grain toast. A smoothie with spinach, banana, nut butter, and oat milk. These are not complicated — but they are real, whole food that nourishes your body beautifully.

Healthy eating doesn't have to be elaborate to be effective. On the hard days, simple is more than enough.
